Mexican Midsummer Treats

Ingredients:
- 500 g ground beef
- 1 dl onion, finely chopped
- 2 garlic cloves, crushed
- 1 tsp cumin
- 1 tsp smoked paprika
- 1/2 tsp chili powder
- 1 dl crushed tomatoes
- 1 dl corn (fresh or frozen)
- 1 dl black beans, rinsed
- 1 dl cilantro, finely chopped
- 8-10 tortillas
- 2 dl shredded cheese (e.g., cheddar)
- Salt and pepper to taste
- Lime wedges for serving
Instructions:
1. Heat a skillet over medium heat and add the onion and garlic. Sauté until soft.
2. Add the ground beef to the skillet and cook until fully browned. Season with cumin, smoked paprika, chili powder, salt, and pepper.
3. Stir in the crushed tomatoes, corn, and black beans. Mix well and let simmer for about 5-10 minutes.
4. Take the tortillas and fill them with the beef mixture. Sprinkle chopped cilantro and shredded cheese on top.
5. Roll the tortillas tightly and place them in a baking dish. Bake at 180°C (350°F) for about 15 minutes, until the cheese is melted and the tortillas are golden brown.
6. Serve with lime wedges on the side.
