Ingredients:
- 1 cup sugar or 1 cup coconut palm sugar
- 7 tablespoons butter or 1/2 cup coconut oil
- 2 eggs
- 2 1/2 cups all-purpose flour
- 1 cup rye flour
- 2 teaspoons baking powder
- 2 teaspoons vanilla sugar
- 1 cup plain yogurt or buttermilk
- 1 bag frozen blueberries
Instructions:
1. Preheat the oven to 400°F (200°C).
2. In a bowl, beat together the sugar and butter (or coconut oil) until light and fluffy.
3. Add the eggs one at a time, mixing well after each addition.
4. In a separate bowl, mix together the all-purpose flour, rye flour, baking powder, and vanilla sugar.
5. Add half of the dry ingredients to the wet mixture and stir well.
6. Incorporate the yogurt (or buttermilk) and mix until smooth.
7. Gently fold in the remaining dry ingredients and the frozen blueberries, being careful not to crush the berries.
8. Divide the batter into muffin cups, filling each about 2/3 full, and bake for about 20 minutes or until the muffins are golden brown and cooked through.
9. Allow to cool slightly before serving.
