Moist Rhubarb Pie

A delightful and moist rhubarb pie perfect for any occasion. Preparation Time: 15 minutes
Cooking Time: 40 minutes
Serving Size: 8 servings
Ingredients:
- 200 g butter
- 2 dl sugar
- 4 dl all-purpose flour
- 2 tsp baking powder
- 1 dl milk
- 3-4 dl rhubarb (chopped)
- 1 tsp vanilla sugar
- 1 egg
Instructions:
1. Preheat the oven to 175°C (350°F).
2. Melt the butter and let it cool slightly.
3. In a bowl, mix the sugar and melted butter.
4. Add the egg and milk to the mixture and stir well.
5. Combine the flour, baking powder, and vanilla sugar. Add the dry ingredients to the butter-sugar mixture and mix until smooth.
6. Pour the batter into a greased baking dish.
7. Evenly distribute the chopped rhubarb on top of the batter.
8. Bake in the oven for about 30-40 minutes, until the pie is golden brown and cooked through.
9. Let cool before serving.
