Ingredients:
- 500 g tiger prawn tails- 500 g potatoes
- 1 onion
- 2 garlic cloves
- 1 bell pepper (preferably red)
- 400 g crushed tomatoes
- 100 ml olive oil
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp smoked paprika
- Fresh parsley for garnish
Instructions:
1. Peel and slice the potatoes into thin rounds. Chop the onion and garlic. Dice the bell pepper.2. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic, and sauté until soft.
3. Add the diced bell pepper and cook for a few more minutes.
4. Stir in the potatoes, crushed tomatoes, salt, black pepper, and smoked paprika. Mix well.
5. Place the tiger prawn tails on top of the mixture. Cover the skillet with a lid and let it simmer for about 10 minutes.
6. Transfer the mixture to an oven-safe dish. Bake in the oven at 200°C (400°F) for about 20-25 minutes, until the potatoes are cooked through.
7. Garnish with fresh parsley before serving.
