A delicious dish that combines the flavors and colors of autumn, warming both the heart and stomach. Preparation Time: 45 minutes
Serving Size: 4 servings
Ingredients:
- 500 g sweet potatoes
- 300 g carrots
- 1 red onion
- 2 garlic cloves
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp thyme
- 1 tbsp honey
- 100 g feta cheese
Instructions:
1. Peel and dice the sweet potatoes and carrots into cubes.
2. Slice the red onion and crush the garlic cloves.
3. Heat olive oil in a large skillet over medium heat. Add the sweet potatoes and carrots, and sauté for about 10 minutes.
4. Add the red onion and garlic, and sauté for an additional 5 minutes.
5. Season with salt, black pepper, thyme, and honey. Mix well.
6. Cover with a lid and simmer on low heat for about 15 minutes or until the vegetables are tender.
7. Crumble feta cheese on top before serving.
