Spinach Shakshuka

A delicious and nutritious breakfast dish where eggs cook on a bed of spinach and tomatoes. This version is particularly tasty and easy to prepare! Preparation Time: 30 minutes
Serving Size: 2 servings
Ingredients:
- 4 eggs - 1 medium onion (or half a leek)
- 2 tablespoons olive oil
- About 250 g fresh spinach
- A few cherry tomatoes, halved
- 100 g feta cheese
- Salt
- Black pepper
- Chili flakes
Instructions:
1. Heat olive oil in a pan and add chopped onion or leek. Sauté until lightly browned. 2. Add halved cherry tomatoes to the pan and cook until they start to soften.
3. Wilt the spinach leaves in boiling water for a few minutes or chop the spinach and sauté it with the onion and tomatoes.
4. Layer the spinach over the onion mixture in the pan, seasoning with salt, black pepper, and chili flakes.
5. Crack the eggs over the spinach and crumble feta cheese on top.
6. Cook on low heat until the eggs are set and the cheese is slightly melted.
7. Serve immediately.
