Homemade Christmas herring is a delightful addition to the holiday table and makes a wonderful gift idea. This recipe is easy to prepare, and it's best to make a larger batch to share with friends and family.
Preparation Time: 2 hours + marinating
Serving Size: About 8-10 servings

Ingredients:

- 1 kg herring (semi-salted or unsalted)
- 2 dl sugar
- 2 dl vinegar (e.g., apple cider vinegar)
- 3 dl water
- 1 onion
- 2-3 carrots
- 1 bay leaf
- 5–10 black peppercorns
- 1 tbsp mustard seeds
- 1 tbsp dill (fresh or dried)
- 2-3 tbsp olive oil

Instructions:

1. Rinse the herring fillets in cold water and pat them dry with paper towels.
2. Slice the onion into rings and the carrots into thin rounds.
3. Prepare the marinade: In a pot, combine sugar, vinegar, water, bay leaf, black peppercorns, and mustard seeds. Heat the mixture until the sugar dissolves. Allow it to cool.
4. Layer the herring fillets, onion rings, and carrot slices in a tightly sealed jar.
5. Pour the cooled marinade over the ingredients and add dill and olive oil.
6. Seal the jar tightly and let it marinate in the refrigerator for at least 24 hours, preferably 2-3 days before serving.
