These delicious raspberry muffins are the perfect dessert or snack for coffee breaks. They are soft, moist, and bursting with raspberry flavor. Preparation Time: 30 minutes
Serving Size: 12 muffins
Ingredients:
- 2 eggs - Approximately 2.5 dl all-purpose flour
- 150 g melted margarine
- 1.5 dl sugar
- 1.5 tsp baking powder
- 1-2 dl frozen raspberries
Instructions:
1. Melt the margarine and mix in the sugar.2. Add the eggs once the mixture has cooled slightly.
3. Stir in the flour and baking powder quickly until just combined. Be careful not to overmix to keep the batter light.
4. Gently fold in the frozen raspberries.
5. Divide the batter into muffin cups.
6. Bake at 180°C (350°F) for about 15-20 minutes or until the muffins are golden brown.
