Ingredients:

- 2 dl almond flour
- 1 dl shredded coconut
- 1 dl maple syrup
- 1 dl lemon juice
- 1 dl orange juice
- 1 dl coconut oil (melted)
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- A pinch of salt
- For decoration: fresh fruits and mint leaves

Instructions:

1. Preheat the oven to 180°C (350°F). Grease and flour a cake pan.
2. In a bowl, mix together almond flour, shredded coconut, baking powder, and salt.
3. In another bowl, combine maple syrup, lemon juice, orange juice, melted coconut oil, and vanilla extract. Mix well.
4. Combine the dry and wet ingredients and stir until a smooth batter forms.
