Delicious spiced bites reminiscent of gingerbread, perfect for holiday indulgence.
Preparation time: 15 minutes + chilling
Serving size: About 20 pieces
Ingredients:
- 15 dried dates (approximately 1 2/3 cups)
- 1/2 cup water
- 1 cup rolled oats (gluten-free if needed)
- 1 1/2 cups almond flour
- A generous pinch of sea salt
- 1 1/2 teaspoons Ceylon cinnamon
- 1/3 teaspoon ground cardamom
- 1/3 teaspoon ground cloves
Instructions:
1. Chop the dates and soak them in water for a few hours.
2. In a food processor, combine the rolled oats, almond flour, salt, cinnamon, cardamom, and cloves.
3. Blend the ingredients until they form a smooth mixture.
4. Add the soaked dates along with the soaking water and blend until a dough forms.
5. Roll the dough into small balls.
6. Allow the balls to chill in the refrigerator for at least a few hours before enjoying.
These bites can also be frozen for unexpected guests.
