Ingredients:
- Approximately 400 g rhubarb
- For the dough:
- 150 g margarine
- 200 g sugar
- 1 egg
- 200 g sour cream
- 400 g all-purpose flour
- 1 tsp baking powder
- 100 g crushed nuts (e.g., walnuts or hazelnuts)
Instructions:
1. Peel and chop the rhubarb into small pieces.
2. In a bowl, cream the margarine and sugar together until light and fluffy.
3. Add the egg and sour cream, mixing well until combined.
4. Gradually stir in the flour and baking powder until the mixture is smooth.
5. Gently fold in the crushed nuts and rhubarb pieces into the batter.
6. Pour the batter into a greased tart pan.
7. Bake at 180°C (350°F) for about 30-40 minutes, or until the tart is golden brown and cooked through.
8. Allow to cool before serving, and enjoy with vanilla ice cream if desired.
