A delicious sushi recipe that combines fresh mushrooms and traditional sushi, creating a unique flavor experience. Perfect as an appetizer or a light meal. Preparation Time: 30 minutes
Serving Size: 4-6 servings
Ingredients:
- 2 dl sushi rice - 2.5 dl water
- 3 tbsp rice vinegar
- 1 tbsp sugar
- 1/2 tsp salt
- 200 g chanterelle mushrooms (or other mushrooms)
- 1 avocado
- 1/2 leek
- 4 sheets nori seaweed
- Soy sauce for serving
- Wasabi and ginger (optional)
Instructions:
1. Rinse the sushi rice under cold water until the water runs clear. Cook the rice with 2.5 dl of water for about 20 minutes, until the water is absorbed.2. In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Add this mixture to the cooked rice and gently fold it in, being careful not to crush the rice. Let it cool.
3. Clean the chanterelle mushrooms and sauté them in a pan for a few minutes until soft. Season lightly with salt.
4. Slice the avocado into thin pieces and cut the leek into rings.
5. Place a sheet of nori on a sushi mat (or a flat surface) with the shiny side down. Spread about 1/4 of the rice on the nori, leaving space at the edges.
6. Place the sautéed mushrooms, avocado, and leek in the center of the rice.
7. Roll the nori tightly using the sushi mat as a guide. Cut the roll into 6-8 pieces with a sharp knife.
8. Serve the sushi with soy sauce, wasabi, and ginger on the side.
