Savory Sun-Dried Tomato and Olive Muffins

Ingredients:
- 1 onion
- 100 g olives
- 150 g sun-dried tomatoes
- 100 g cherry tomatoes
- 2 cloves garlic
- 150 g shredded cheese
- 2 dl all-purpose flour
- 1 dl milk
- 2 eggs
- 1 tsp baking powder
- Salt and pepper to taste
- Oil for sautéing
Instructions:
1. Peel and finely chop the onion and garlic.
2. Chop the olives, sun-dried tomatoes, and cherry tomatoes.
3. Heat oil in a pan and sauté the onion and garlic until soft.
4. Add the olives, sun-dried tomatoes, and cherry tomatoes to the pan. Cook for a few minutes.
5. In a bowl, mix the flour, baking powder, salt, and pepper.
6. Add the eggs and milk to the dry ingredients, stirring until a smooth batter forms.
7. Fold in the sautéed vegetables and shredded cheese into the batter.
8. Divide the batter evenly into a muffin tin.
9. Bake at 180 degrees Celsius for about 20-25 minutes, or until the muffins are golden brown.
10. Allow to cool slightly before serving. Enjoy!
