A creamy and flavorful mushroom risotto featuring delicate porcini mushrooms.
Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 2-3 porcini mushrooms
- 1 onion
- 2 garlic cloves
- 4 tablespoons butter
- 400g arborio rice
- 200ml white wine
- Approximately 800ml vegetable broth (or water with 1-2 vegetable bouillon cubes)
- 2 tablespoons butter (additional)
- Nutritional yeast flakes (to taste)
- Salt and pepper (to taste)
Instructions:
1. Finely chop the onion and garlic.
2. Heat 2 tablespoons of butter in a large skillet and add the onion and garlic. Sauté until soft.
3. Add the chopped porcini mushrooms to the skillet and sauté for a few minutes.
4. Stir in the arborio rice until well coated and translucent.
5. Pour in the white wine and let it evaporate.
6. Gradually add the vegetable broth, about 100ml at a time, stirring continuously. Only add the next portion once the previous has been absorbed by the rice.
7. Continue cooking until the rice is al dente and creamy, about 18-20 minutes.
8. Remove the skillet from heat and stir in the remaining butter and nutritional yeast flakes. Mix well.
9. Season with salt and pepper to taste.
10. Serve immediately and enjoy!
