A beautiful and impressive cake perfect for birthday celebrations, featuring delicious strawberry mousse and refreshing lemon mousse layered in a light cake base. Decorated with fondant for a stunning finish.

Ingredients:

- 4 eggs
- 1 dl sugar
- 2 dl all-purpose flour
- 1 dl milk
- 1 dl oil
- 1 tsp baking powder
- 300 g strawberries
- 200 g cream
- 200 g cream cheese
- 1 dl lemon juice
- 100 g sugar
- 200 g Satin Ice fondant
- Fondant decorations

Instructions:

1. Prepare the light cake base. Whisk the eggs and sugar until fluffy.
2. Add the flour and baking powder, mixing until smooth.
3. Incorporate the milk and oil; stir well.
4. Pour the batter into a greased and floured baking pan.
5. Bake at 175 °C (350 °F) for about 25-30 minutes or until the cake is cooked through.
6. Allow the cake to cool before filling.
7. Prepare the strawberry mousse by pureeing the strawberries and mixing in the cream and cream cheese.
8. For the lemon mousse, combine the lemon juice and sugar with the cream cheese.
9. Slice the cooled cake into three layers and spread the strawberry mousse first, followed by the lemon mousse in between the layers.
10. Cover the cake with Satin Ice fondant.
11. Decorate with fondant decorations as desired.
