Blueberry Yogurt Pancake with Strawberry Topping

Ingredients:
- 2 tbsp potato flour
- 2.5 dl blueberry puree
- 1 dl sesame seeds
- 4 dl whole wheat flour
- 0.5 dl sweetener (to taste)
- 5 dl plain non-fat yogurt
- 1 l water
- 2 eggs
- 3 tbsp lemon-flavored olive oil
- 2 dl milk powder
- 0.5 tsp salt
- 4 dl strawberry puree
Instructions:
1. In a bowl, whisk together all the base ingredients: potato flour, blueberry puree, sesame seeds, whole wheat flour, sweetener, yogurt, water, eggs, olive oil, milk powder, and salt until smooth.
2. Heat a little oil in a pan and pour the batter into the pan.
3. Cook the pancake over medium heat until golden brown and cooked through on both sides.
4. Serve the pancake with a berry yogurt topping, adding strawberry puree and extra sweetener if desired.
