Etanamakkara - A Unique Snail Sausage

Ingredients
- 500 g ground beef - 200 g snails (canned or fresh)
- 100 g bacon, chopped
- 1 dl cream
- 1 large onion, finely chopped
- 2 cloves garlic, crushed
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp smoked paprika
- 1 tsp fresh thyme, chopped
- 1/2 dl fresh parsley, chopped
- Sausage casings (about 2 m)
Instructions
1. Heat a little oil in a pan and add the chopped onion and garlic. Sauté until softened. 2. Add the bacon to the pan and cook until crispy.
3. In a bowl, combine the ground beef, sautéed onion and bacon, snails, cream, salt, black pepper, smoked paprika, thyme, and parsley. Mix well.
4. Fill the sausage casings with the prepared mixture using a sausage stuffer or funnel.
5. Tie the sausages at both ends and poke small holes in the surface to prevent bursting during cooking.
6. Cook the snail sausages on a grill or in a pan over medium heat for about 15-20 minutes, until they are beautifully browned and cooked through.
7. Serve the sausages with fresh bread and salad.
