Ingredients:
- 200 g fennel- 300 g gravlax salmon
- 150 g reindeer pastrami
- 100 g malt cream
- 200 g Baltic herring
- 1 dl IPA beer
- 200 g duck breast
- 200 g pork cheek
- 1 dl dark beer
- 1 pre-made onion pie
- Salt and pepper to taste
- Fresh dill for garnish
Instructions:
1. Prepare the fennel by slicing it into thin strips.2. Arrange the gravlax salmon and fennel beautifully on a plate.
3. Add the reindeer pastrami and malt cream next to the salmon.
4. Prepare the herring escabeche: marinate the herring with IPA beer and let it sit for about 30 minutes.
5. Cook the duck breast in a pan until golden brown, then lower the heat until fully cooked.
6. Braise the pork cheek in dark beer until the meat is tender.
7. Heat the onion pie in the oven according to package instructions.
8. Serve all the ingredients beautifully on a plate and garnish with dill.
