A delicious and nutritious breakfast spread featuring avocado toast topped with eggs, fresh vegetables, and optional nuts.

Serving Size: 2 servings
Ingredients:
- 2 slices whole grain bread
- 1 avocado
- 2 eggs
- Salt and pepper to taste
- 1 tomato
- 1/2 cucumber
- Lettuce
- Olive oil
- Lemon juice
- Roasted nuts (optional)
Instructions:
1. Boil the eggs to your desired level of doneness.
2. Slice the avocado and mash it with a fork. Add salt, pepper, and lemon juice to taste.
3. Lightly toast the whole grain bread slices.
4. Spread the mashed avocado on top of the toasted bread.
5. Slice the tomato and cucumber, and arrange them on the bread.
6. Add the boiled eggs on top of the bread.
7. Garnish with lettuce and roasted nuts (if using) on the plate.
8. Drizzle some olive oil on top and enjoy!
