A delicious and stunning dessert that combines gingerbread cookies and blue cheese, perfect for Christmas or special occasions. Preparation Time: 30 minutes + 2 hours chilling
Serving Size: 8-10 servings
Ingredients
Base: - 7 traditional gingerbread cookies
- 7 digestive biscuits
- 75 g butter
Filling:
- 400 g blue cheese cream cheese
- 50 g Aura cheese
- 1 dl sugar
- 2 dl cream
Instructions
1. Crumble the gingerbread cookies and digestive biscuits in a bowl. Melt the butter and mix it with the crumbs. 2. Press the cookie mixture firmly into a 20 cm diameter springform pan. Place in the refrigerator to set for about 30 minutes.
3. In a separate bowl, beat the blue cheese cream cheese, Aura cheese, and sugar until smooth.
4. In another bowl, whip the cream until soft peaks form, then gently fold it into the cheese mixture.
5. Pour the filling over the chilled base and smooth the top.
6. Cover the pan with plastic wrap and refrigerate for at least 2 hours or until the filling is set.
7. Serve cold, for example with cloudberry jam.
