A delicious and light lingonberry foam, perfect for dessert or a snack. The combination of rye flour and lingonberries brings freshness and flavor, and it's easy to prepare. Preparation Time: 30 minutes + cooling
Serving Size: 4 servings
Ingredients:
- 1 dl rye flour
- A pinch of salt
- 2.5-3 dl lingonberry puree
- 4 dl water
- 1-1.5 dl fruit sugar
Instructions:
1. Boil the water and add a pinch of salt.
2. Gradually add the rye flour through a sieve while whisking continuously.
3. Cook the mixture for 10-15 minutes.
4. Stir in the lingonberry puree and fruit sugar, mixing well.
5. Allow the mixture to cool at room temperature.
6. Whip the mixture with a mixer for about 10 minutes until fluffy.
7. Spoon the foam into four serving bowls.
8. Place the bowls in the refrigerator to set.
9. Garnish with lingonberries before serving.
