A delicious and summery dessert that combines the tartness of rhubarb with the richness of oats. Serve it with vanilla ice cream for a perfect flavor experience!

Serving Size: 8 servings
Ingredients:
- 200 g rolled oats
- 100 g butter or margarine
- 100 g sugar
- 1 dl all-purpose flour
- 1 tsp baking powder
- 1 tsp cinnamon
- 500 g rhubarb
- 2 tbsp cornstarch
- 2 tbsp sugar (for rhubarb)
- Vanilla ice cream for serving
Instructions:
1. Preheat the oven to 180°C (350°F).
2. Grease a pie dish.
3. In a bowl, mix the rolled oats, melted butter, sugar, all-purpose flour, baking powder, and cinnamon.
4. Press the mixture into the bottom and sides of the pie dish.
5. Chop the rhubarb and mix it with the cornstarch and sugar.
6. Spread the rhubarb mixture over the oat crust.
7. Bake the pie in the oven for about 30-35 minutes, until it is beautifully golden brown.
8. Allow to cool slightly before serving.
9. Serve with vanilla ice cream.
