A delicious and crispy dish made from eggplant, perfect for a snack or appetizer. Preparation Time: 1 hour
Serving Size: 4 servings
Ingredients:
- 2 eggplants- 1 cup all-purpose flour
- 2 eggs
- 2 cups breadcrumbs
- Salt and pepper to taste
- Oil for frying
Instructions:
1. Wash the eggplants and slice them into approximately 1 cm thick rounds.2. Sprinkle salt over the eggplant slices and let them sit for about 30 minutes to draw out bitterness.
3. Rinse the eggplants and pat them dry with paper towels.
4. Prepare three bowls: place the flour in one, whisked eggs in another, and breadcrumbs in the third.
5. Dip each eggplant slice first in flour, then in the egg, and finally in the breadcrumbs.
6. Heat oil in a frying pan over medium heat.
7. Fry the eggplant fritters on both sides until golden brown, about 3-4 minutes per side.
8. Transfer the fried fritters to paper towels to drain excess oil.
9. Serve warm, ideally with a dip of your choice.
