A delicious gluten-free strawberry cake designed for those with celiac disease, perfect for any celebration.
Preparation Time: 1 hour + 3 hours in the refrigerator
Serving Size: 12 servings
Ingredients
CRUST:
- 100 g gluten-free cookies
- 40 g melted butter or margarine
FILLING:
- 7 gelatin sheets
- 4 dl (200 g) strawberries
- 1 dl sugar
- 2 dl heavy cream
- 200 g plain cream cheese
Instructions:
1. Crumble the gluten-free cookies and mix with the melted butter.
2. Press the mixture firmly into a baking pan lined with parchment paper.
3. Soak the gelatin sheets in cold water for about 5 minutes.
4. Puree the strawberries and mix with the sugar.
5. Heat 1 dl of the strawberry puree and dissolve the squeezed gelatin sheets into it.
6. Combine the gelatin mixture with the remaining strawberry puree.
7. Whip the heavy cream and fold it into the cream cheese.
8. Add the strawberry mixture to the cream cheese and whipped cream mixture.
9. Pour the filling over the cookie crust and smooth the top.
10. Allow to set in the refrigerator for at least 3 hours before serving.
