Ingredients:
- 4 lamb shanks
- 2 carrots
- 1 small parsnip
- 1 piece of celery
- 4 shallots
- 4 garlic cloves
- 100 g tomato paste
- Salt and pepper to taste
- Fresh herbs (e.g., rosemary or thyme)
- 1 dl red wine (optional)
- 5 dl beef broth or water
Instructions:
1. Brown the lamb shanks in a skillet until they have a nice color. Remove them from the pan and set aside.
2. Peel and chop the carrots, parsnip, celery, and shallots. Dice the garlic.
3. Heat a little oil in the same pan and add the shallots and garlic. Sauté for a moment.
4. Add the carrots, parsnip, and celery to the pan. Cook the vegetables for a few minutes.
5. Stir in the tomato paste and let it cook for a moment.
6. Return the lamb shanks to the pan and pour in the red wine (if using) and beef broth or water. Season with salt, pepper, and fresh herbs.
7. Allow the dish to simmer on low heat with a lid for about 2.5 hours, until the meat is tender and easily pulls away from the bone.
8. Serve the braised lamb shank with mashed potatoes or fresh bread.
