Easy Blueberry Pie

This blueberry pie is super easy to make and tastes delicious. Perfect as a dessert or coffee cake, it can be adapted based on what you have in your pantry. Preparation Time: 50 minutes
Serving Size: 8-10 servings
Ingredients:
- 150 g room temperature butter (or 1.5 dl mild-flavored oil)
- 1 dl any sugar
- Juice of 1/2 a lemon (or apple juice)
- 2 eggs
- 1 tsp vanilla sugar
- 1 tsp baking powder
- 3 dl flour
- 1 tbsp quark or milk (optional)
- 1 tbsp flour (for coating blueberries)
- 2-3 dl blueberries (to taste)
Instructions:
1. In a bowl, mix the room temperature butter and sugar until combined.
2. Add the lemon juice and mix well.
3. Beat in the eggs one at a time. If using, add the quark or milk.
4. In a separate bowl, combine the flour with the vanilla sugar and baking powder, then gradually add to the butter mixture, mixing well.
5. Pour the batter into a baking pan lined with parchment paper.
6. Toss the blueberries in the flour and sprinkle evenly over the batter.
7. Bake in a preheated oven at 180°C (350°F) for about 20-30 minutes, or until the top is golden brown.
8. Enjoy immediately with milk or milk coffee, and a good book!
