A delicious glitter cake perfect for celebrations, featuring a refreshing mint chocolate mousse filling and a creamy vanilla Satin Ice frosting. Preparation Time: 2 hours
Serving Size: 10-12 servings
Ingredients:
- Chocolate Cake Base: - 200 g gluten-free flour
- 50 g cocoa powder
- 150 g sugar
- 1 tsp baking powder
- 1/2 tsp salt
- 3 eggs
- 100 ml milk
- 100 ml oil
- 1 tsp vanilla extract
- Mint Chocolate Mousse:
- 200 g dark chocolate
- 300 ml cream
- 2 tbsp sugar
- 1/2 tsp mint extract
- Frosting and Decorations:
- 300 g Satin Ice frosting (vanilla)
- Fondant for decorations
- Edible silver stars
- Edible glitter
Instructions:
1. Prepare the Chocolate Cake Base: - Preheat the oven to 175 °C (350 °F).
- In a bowl, mix the dry ingredients.
- Add eggs, milk, oil, and vanilla extract. Mix until smooth.
- Pour the batter into a greased cake pan and bake for about 25-30 minutes. Let it cool.
2. Prepare the Mint Chocolate Mousse:
- Melt the dark chocolate in a double boiler.
- Whip the cream and sugar in a separate bowl until soft peaks form.
- Gently fold in the melted chocolate and add the mint extract.
3. Assemble the Cake:
- Cut the cooled cake into two layers.
- Spread the mousse on one layer and place the other layer on top.
- Cover the entire cake with the Satin Ice frosting.
4. Decorate:
- Use fondant to create decorations of your choice.
- Add edible silver stars and sprinkle with edible glitter on top of the cake.
