A delicious and intense Finnish salmiakki caramel perfect for licorice lovers. Preparation Time: 15 minutes
Serving Size: 10-12 caramels
Ingredients:
- 150 g sugar
- 50 ml water
- 50 g glucose syrup
- 1 tsp salt
- 1 tsp salmiakki extract
- 1/2 tsp licorice powder
- 1/2 tsp citric acid
Instructions:
1. Combine sugar, water, and glucose syrup in a saucepan. Heat over medium heat until the sugar dissolves.
2. Increase the heat and boil the mixture until it reaches 140 °C (hard ball stage).
3. Remove the saucepan from heat and quickly stir in salt, salmiakki extract, and licorice powder.
4. Add citric acid and mix well.
5. Pour the mixture into a parchment-lined mold and let it cool slightly.
6. Once cooled, cut the mass into appropriate-sized pieces and allow to dry.
7. Store the caramels in an airtight container.
