Ingredients:

Instructions:
1. Toast the rye bread and spread Dijon mustard on top.
2. Prepare the poached egg: bring water to a simmer in a pot, add a pinch of salt, and create a whirlpool in the water. Gently crack the egg and drop it into the water. Cook for about 3-4 minutes.
3. Make hollandaise sauce or warm up pre-made sauce.
4. Place the poached egg on the rye bread, drizzle with hollandaise sauce, and top with cold-smoked reindeer.
