Description: Coca-leipä is a delicious Catalan bread known as a tapa, best served warm or at room temperature. The bread is topped with colorful vegetables and anchovy fillets.
Preparation Time: 1 hour
Serving Size: 4-6 servings
Ingredients:
- 500 g all-purpose flour
- 25 g fresh yeast
- 300 ml warm water
- 50 ml olive oil
- 1 tsp salt
- 1 zucchini
- 1 red bell pepper
- 1 yellow bell pepper
- 100 g anchovy fillets
- Black pepper to taste
Instructions:
1. Dissolve the yeast in warm water and let it sit for 5 minutes.
2. In a large bowl, mix the flour and salt. Add the yeast mixture and olive oil to the flour.
3. Knead the dough for 10 minutes until smooth and elastic. Cover the dough and let it rise for about 30 minutes.
4. Preheat the oven to 220°C (428°F).
5. Roll out the dough into a thin sheet and place it on a baking paper.
6. Slice the zucchini and bell peppers thinly, then arrange them on top of the dough.
7. Add the anchovy fillets and season with black pepper.
8. Bake in the oven for about 20-25 minutes, until the bread is golden brown.
9. Allow to cool slightly and serve warm or at room temperature.
