A delicious recipe combining slow-cooked beef in Bloody Mary sauce with homemade tortillas, perfect for a special meal. Preparation Time: 2 hours
Serving Size: 4 servings
Ingredients:
- 800 g beef shoulder or shank
- 1 tsp salt
- 1 tsp black pepper
- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 400 g crushed tomatoes
- 100 ml vodka
- 2 tbsp Worcestershire sauce
- 1 tbsp lime juice
- 1 tbsp Tabasco (add more if desired)
- 1 dl fresh parsley, chopped
For the Tortillas:
- 2 dl corn flour
- 1 dl wheat flour
- 1/2 tsp salt
- 1 dl water
- 1 tbsp olive oil
Instructions:
1. Season the beef with salt and black pepper.
2. Heat olive oil in a large pot and brown the beef until golden.
3. Add onion and garlic, sauté until softened.
4. Stir in crushed tomatoes, vodka, Worcestershire sauce, lime juice, and Tabasco. Mix well.
5. Cover the pot and simmer the beef on low heat for about 1.5 hours, until tender.
6. For the tortillas, mix corn flour, wheat flour, and salt in a bowl. Add water and olive oil, knead until smooth.
7. Divide the dough into four portions and roll each into thin circles.
8. Cook the tortillas on a hot cast-iron skillet until golden brown on both sides.
9. Once the beef is cooked, shred it and mix with chopped parsley.
10. Fill the tortillas with the beef mixture and serve with fresh guacamole and salsa.
