Ingredients:
- 500 g white fish (e.g., cod or pike fillets) - 300 g shrimp, peeled
- 200 g mussels, cleaned
- 1 large onion, chopped
- 2 garlic cloves, crushed
- 2 medium potatoes, diced
- 1 medium tomato, diced
- 100 ml white wine
- 1 liter fish stock
- 2 tablespoons olive oil
- 1 teaspoon saffron
- 1 teaspoon thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Heat olive oil in a large pot over medium heat. Add chopped onion and crushed garlic, sautéing until soft.2. Add diced potatoes, tomato, saffron, thyme, salt, and pepper to the pot. Stir well and cook for about 5 minutes.
3. Pour in white wine and add fish stock. Bring to a simmer and cook for about 15 minutes, until the potatoes are almost tender.
4. Add fish fillets and mussels to the soup. Cook for an additional 5-7 minutes, until the fish is cooked through and the mussels open.
5. Finally, add the shrimp and cook for another minute, until heated through.
6. Serve hot, garnished with fresh parsley.
