A velvety and flavorful Andalusian soup featuring sherry and mayonnaise, taking your taste buds on a journey to Spain.

Serving Size: 4 servings
Ingredients:
- 1 dl mayonnaise
- 2 dl sherry
- 1 dl vegetable broth
- 1 small onion, finely chopped
- 2 garlic cloves, crushed
- 2 tablespoons olive oil
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Heat the olive oil in a pot over medium heat and add the chopped onion and crushed garlic. Sauté until soft and translucent.
2. Add the paprika to the pot and mix well.
3. Pour in the sherry and vegetable broth. Let it simmer on low heat for about 10 minutes.
4. Remove the pot from the heat and let the mixture cool slightly.
5. Stir in the mayonnaise and use an immersion blender until the soup is completely smooth.
6. Season with salt and pepper to taste.
7. Serve the soup warm, garnished with fresh parsley.
