A delicious and spicy pancake that combines gingerbread spices with a soft batter. This recipe is perfect for holiday treats or winter coffee gatherings.

Ingredients:

- 1 tsp vanilla sugar
- ½ dl sugar
- 3 dl all-purpose flour
- 6 dl milk
- 3 eggs
- 3 dl gingerbread crumbs
- 1 tbsp cardamom

Instructions:

1. Whisk the eggs and sugar until fluffy.
2. In a separate bowl, mix the flour, vanilla sugar, cardamom, and gingerbread crumbs.
3. Gradually add the dry ingredients to the egg-sugar mixture, alternating with the milk.
4. Pour the batter into a baking tray lined with parchment paper or greased baking dish.
5. Bake in the oven at 220°C (428°F) for about 20-25 minutes or until the top is beautifully golden brown.
