Hearty Vegetable Soup

Ingredients:
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 3 carrots, diced
- 2 potatoes, diced
- 1 zucchini, diced
- 1 red bell pepper, diced
- 1 liter vegetable broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- 100 grams green beans, chopped
- Fresh parsley for garnish
Instructions:
1. Heat olive oil in a large pot over medium heat.
2. Add chopped onion and minced garlic, sauté until soft.
3. Stir in the diced carrots and potatoes, cooking for about 5 minutes.
4. Add the zucchini and red bell pepper, mixing well.
5. Pour in the vegetable broth and add salt, black pepper, thyme, and basil. Bring to a boil.
6. Reduce heat and let simmer for 20-25 minutes, until all vegetables are tender.
7. Add the green beans and cook for an additional 5 minutes.
8. Serve the soup warm, garnished with fresh parsley.
