A delicious Finnish crumb cake that's perfect for any occasion.

Serving Size: 8 servings
Ingredients:
- 3 dl potato flour
- 2 dl sugar
- 1 tsp lemon juice
- 2 tsp baking powder
- 1 dl wheat flour
- 200 g fat (butter or margarine)
- 3 eggs
Instructions:
1. Preheat the oven to 200°C (392°F). Grease and flour a baking pan.
2. In a mixing bowl, beat the fat and sugar together until light and fluffy.
3. Add the eggs one at a time, mixing well after each addition.
4. In another bowl, combine the dry ingredients: potato flour, wheat flour, baking powder, and lemon juice.
5. Gradually add the dry mixture to the wet mixture, stirring until just combined.
6. Pour the batter into the prepared baking pan and bake in the lower part of the oven for about 35 minutes, or until golden brown and a toothpick comes out clean.
