Delicious traditional Finnish pastries filled with rice porridge. Perfect for festive tables or as a snack. Preparation Time: 1 hour
Serving Size: 10-12 pieces
Ingredients:
- 1 dl wheat flour
- 1 dl water
- 2 dl porridge rice
- 1 dl rye flour
- 1 l whole milk
- 1 tsp salt
Instructions:
1. Prepare the porridge: In a pot, bring 1 dl of water to a boil. Add the porridge rice to the boiling water. Stir the rice until most of the water is absorbed.
2. Add 1 l of whole milk to the porridge and let the mixture simmer. Stir occasionally to prevent sticking. Cook the porridge until thick and done. Season with salt and let it cool.
3. Make the dough: In a bowl, mix the wheat flour and rye flour. Add water and knead the dough until smooth. The dough should be soft but not sticky.
4. Shape the pastries: Divide the dough into 10-12 pieces. Roll each piece into a thin circle. Place a spoonful of porridge in the center of each circle.
5. Bake the pastries: Fold the edges over the filling and pinch them tightly. Bake the pastries in a preheated oven at 225°C (437°F) for about 15-20 minutes, until golden brown.
6. Serve: Allow the pastries to cool slightly and serve with butter or egg butter.
