Ingredients:
- 250 g pasta (e.g., spaghetti or penne)
- 200 g mushrooms, sliced
- 150 g fresh spinach
- 2 garlic cloves, minced
- 2 tablespoons olive oil
- 50 g Parmesan cheese, grated
- Salt and pepper to taste
Instructions:
1. Cook the pasta in salted water according to the package instructions. Drain and reserve a little pasta water.
2. Heat the olive oil in a skillet over medium heat. Add the minced garlic and sauté until golden.
3. Add the sliced mushrooms to the skillet and cook for about 5-7 minutes until they are soft.
4. Stir in the fresh spinach and cook until it has wilted slightly.
5. Mix the cooked pasta into the mushroom mixture. Add a bit of reserved pasta water if needed to keep it from drying out.
6. Season with salt and pepper. Stir in the grated Parmesan cheese.
7. Serve immediately and enjoy!
