These vegetable patties are flavorful and easy to prepare. They are perfect for a vegetarian diet and make a great addition to salads or potatoes.

Ingredients:
- 2 medium potatoes
- 1 carrot
- 1 red onion
- 1 cup rolled oats
- 1 cup chickpeas (cooked or canned)
- 2 garlic cloves
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika powder
- 1 tbsp olive oil
- Fresh herbs (such as parsley or dill)
Instructions:
1. Peel and boil the potatoes and carrot until soft. Drain and mash them in a bowl.
2. Finely chop the red onion and garlic cloves. Add them to the mashed potatoes and carrot.
3. Incorporate the rolled oats and chickpeas into the mixture. Season with salt, black pepper, and paprika powder. Mix well.
4. Add olive oil and chopped fresh herbs. Stir until a smooth dough forms.
5. Shape the mixture into patties. Heat a frying pan over medium heat and add a little oil.
6. Cook the patties on both sides for about 3-4 minutes until golden brown.
7. Serve warm alongside a salad or potatoes.
