Delicious traditional Finnish pastries filled with rice porridge or potato filling. These pies are a perfect snack or a delightful addition to any festive table.

Ingredients

Dough:
- 3½ dl rye flour
- 1½ dl all-purpose flour
- ½ tsp salt
- 2 dl cold water
- 1 tbsp oil
Filling:
- 1½ dl rice porridge rice
- 5 dl water
- 5 dl milk
- ½ tsp salt
- Butter for brushing

Instructions

1. Cook the rice in water until soft. Add milk and salt, and simmer the porridge on low heat for about 30 minutes until thick. Let it cool.
2. In a bowl, mix rye flour, all-purpose flour, and salt. Add cold water and oil, and knead into a dough.
3. Divide the dough into 10-12 portions. Roll each portion into thin rounds.
4. Place about 1-2 tablespoons of the rice porridge filling in the center of each round. Fold the edges over the filling and pinch tightly to seal.
5. Bake the pies in a preheated oven at 225 °C for about 15-20 minutes until golden brown.
6. Brush the warm pies with melted butter before serving.
