A delightful Finnish spring dish made with potatoes, carrots, and peas, perfect for celebrating Vappu!
Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 200 g potatoes
- 100 g carrots
- 1 dl peas
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh herbs (e.g., parsley or chives)
Instructions:
1. Peel and dice the potatoes and carrots into small cubes.
2. Boil the potatoes and carrots in salted water for about 10-15 minutes until tender.
3. Add the peas to the boiling water and cook for an additional 2-3 minutes.
4. Drain the vegetables and transfer them to a bowl.
5. Add olive oil, salt, pepper, and chopped herbs. Mix well.
6. Serve warm as a delicious Vappu treat.
