A luxurious and flavorful risotto featuring tender lobster, perfect for a special occasion.

Serving Size: 2 people
Ingredients:
- 1 cooked lobster half
- 1 dl Arborio rice
- 1 onion
- 2 garlic cloves
- 5 dl fish stock (or lobster broth)
- 1 dl white wine
- 50 g butter
- 50 g Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Shell the lobster, reserving the shells. Cut the meat into small pieces and set aside.
2. Heat the fish stock in a saucepan and keep it warm.
3. Sauté the chopped onion and garlic in butter in a large pan until soft.
4. Add the Arborio rice and cook for a few minutes until slightly translucent.
5. Pour in the white wine and let it absorb into the rice.
6. Add a ladle of hot fish stock to the rice and stir until almost fully absorbed. Continue this process until the rice is al dente (about 15-20 minutes).
7. Once the risotto is ready, stir in the lobster meat, Parmesan cheese, salt, and pepper. Mix well and let it rest for a moment.
8. Serve the risotto garnished with fresh parsley.
