Ingredients:
- 400 g fresh fish (e.g., salmon or pike)
- 2 tbsp olive oil
- 1 lemon (juice and zest)
- 2 cloves garlic (minced)
- 1 dl fresh parsley (chopped)
- Salt and pepper to taste
- 300 g potatoes
- 100 g green beans
Instructions:
1. Peel and boil the potatoes in salted water until tender. Drain and keep warm.
2. Boil the green beans in salted water for about 5-7 minutes until bright green and crisp. Drain and set aside.
3. Heat the olive oil in a skillet over medium heat. Add the minced garlic and sauté for a moment.
4. Add the fish to the skillet and cook on both sides until done (about 3-4 minutes per side).
5. Squeeze lemon juice over the fish and zest a bit of lemon on top. Season with salt and pepper.
6. Add the boiled potatoes and green beans to the skillet with the fish. Gently mix to combine the flavors.
7. Sprinkle chopped parsley on top and serve immediately.
