Ingredients:
- 300 g Arborio rice
- 1 liter vegetable broth
- 200 g fresh mushrooms (e.g., button mushrooms or chanterelles)
- 1 onion
- 2 garlic cloves
- 100 ml white wine
- 50 g butter
- 50 g Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Heat the vegetable broth in a pot and keep it warm throughout the cooking process.
2. Finely chop the onion and garlic. Slice the mushrooms.
3. In a large saucepan, melt the butter over medium heat. Add the onion and garlic, sautéing until soft.
4. Add the mushrooms and cook until they are golden brown.
5. Stir in the Arborio rice and mix until the rice is slightly translucent.
6. Pour in the white wine and stir until the liquid is absorbed.
7. Gradually add hot vegetable broth, one ladle at a time, stirring continuously. Only add more broth once the previous amount has been absorbed.
8. Continue this process until the rice is al dente and the risotto is creamy, about 18-20 minutes.
9. Remove the risotto from heat and stir in the Parmesan cheese. Season with salt and pepper to taste.
10. Serve immediately, garnished with fresh parsley.
