Ingredients

- 1 whole Huttulan Kukko chicken
- 2 tablespoons olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
- 3-4 cloves garlic, crushed
- 1 lemon, juice and zest
- 3-4 sprigs fresh rosemary
- 500 g potatoes, diced
- 300 g root vegetables (e.g., carrots and celery), chopped

Instructions

1. Preheat the oven to 200°C (390°F).
2. Rinse the chicken under cold water and pat it dry with paper towels.
3. In a bowl, mix together olive oil, salt, black pepper, crushed garlic, lemon juice, and zest.
4. Rub the mixture evenly over the chicken and place the rosemary sprigs inside the cavity.
5. Place the chicken in a roasting pan and surround it with the diced potatoes and chopped root vegetables.
6. Roast the chicken in the oven for about 1 hour and 15 minutes, or until the internal temperature reaches 75°C (165°F).
7. Let the chicken rest for 10 minutes before carving. Serve with the vegetables.
