This delicious Polish nut cake is filled with sour cherries or fresh figs and topped with a soft vanilla custard. Perfect for celebrations or special moments.

Ingredients:

- 200 g nuts (e.g., walnuts or hazelnuts)
- 200 g sugar
- 4 eggs
- 100 g butter, melted
- 1 tsp vanilla extract
- 1 tsp baking powder
- 200 g sour cherries or fresh figs
- 500 ml milk
- 2 tbsp cornstarch
- 1 tbsp vanilla sugar
- 2 egg yolks
- 50 g sugar (for custard)

Instructions:

1. Preheat the oven to 180°C (350°F). Grease and flour a cake pan.
2. Finely chop the nuts and mix them with the sugar in a bowl.
3. Add the eggs one by one, followed by the melted butter and vanilla extract. Mix until a smooth batter forms.
4. Stir in the baking powder and mix well. Pour the batter into the prepared pan.
5. Bake for 30-35 minutes until the cake is golden brown and cooked through. Allow to cool.
6. Prepare the vanilla custard: Heat the milk in a saucepan. In a bowl, mix the cornstarch, vanilla sugar, egg yolks, and sugar. Gradually add the hot milk to the mixture while stirring.
7. Pour the mixture back into the saucepan and heat over low, stirring until the custard thickens. Allow to cool.
8. Slice the cooled cake in half and fill it with sour cherries or figs. Spread the vanilla custard on top and place the other half of the cake on top.
9. Serve the cake sliced and enjoy!
