Delicious beetroot falafels that combine the flavors of traditional falafel with the vibrant color and taste of beetroot. A perfect vegetarian dish that is easy to prepare.

Serving Size: 4-6 servings
Ingredients:
- 1¾ cups falafel mix (recipe [here](http://appelsiinejahunajaa.blogspot.co.il/2012/11/falafelit-vaihe-vaiheelta.html))
- 1 medium beetroot, peeled and chopped
- Salt
- Black pepper
- 2 tablespoons whole wheat flour (or other flour)
- Oil for frying
Instructions:
1. Finely chop the beetroot in a food processor.
2. Add the chopped beetroot to the thawed falafel mix.
3. Mix in salt, black pepper, and whole wheat flour. Stir well to combine.
4. Let the mixture rest in the refrigerator for about 30 minutes.
5. Heat oil for frying or preheat the oven to 200°C (400°F).
6. Shape the mixture into round or flat falafel balls.
7. Fry the falafels in the oil until golden brown and crispy, or place them on a baking sheet lined with parchment paper, brush with oil, and bake in the oven for about 25 minutes (turn halfway through).
8. Serve the falafels with tahini or your favorite dipping sauce.
