- 4 eggs
- 2 slices of bread (preferably whole grain)
- 1 avocado
- 1 tomato
- Salt and pepper to taste
- 1 tablespoon oil for frying
- Fresh basil (optional)
Instructions:
1. Heat the oil in a pan over medium heat.
2. Toast the slices of bread in the pan until golden brown and crispy, flipping carefully.
3. Crack the eggs into the pan next to the bread and cook to your desired doneness.
4. Chop the tomato and avocado. Mix them in a bowl and season with salt and pepper.
5. Once the eggs are cooked, place them on top of the toasted bread.
6. Add the avocado-tomato mixture on top.
7. Garnish with fresh basil if desired.
8. Serve immediately and enjoy!
