A flavorful dish featuring basmati rice, lentils, and dried apricots, perfect for celebrating the New Year.

Serving Size: 4 servings
Ingredients:
- 2 dl basmati rice
- 1 dl lentils
- 1 dl dried apricots
- 1 dl nuts (e.g., walnuts or almonds)
- 1 onion
- 3 garlic cloves
- 1 tsp turmeric
- 1 tsp cinnamon
- 1 tsp salt
- 1/2 tsp black pepper
- 4 dl vegetable broth
- 2 tbsp olive oil
- Fresh parsley for garnish
Instructions:
1. Rinse the basmati rice in cold water and soak it for about 30 minutes.
2. Bring the vegetable broth to a boil in a pot. Add the soaked rice and cook on low heat for about 15 minutes, until the rice is tender.
3. Peel and chop the onion and garlic. Heat the olive oil in a pan and sauté the onion and garlic until golden brown.
4. Add lentils, dried apricots, nuts, turmeric, cinnamon, salt, and black pepper to the pan. Mix well and sauté for a few minutes.
5. Combine the cooked rice with the lentil mixture. Stir gently to mix the flavors.
6. Serve the Persian delights garnished with fresh parsley.
