A delicious dessert to celebrate a gray day, combining black sesame-flavored namelaka and gin or grapefruit soda sorbet. Perfect for those autumn gray days. Preparation Time: 1 hour + 4 hours cooling
Serving Size: 4 servings
Ingredients
Namelaka: - 3/4 cup milk
- 1 tablespoon finely ground black sesame seeds
- 2 gelatin sheets
- 100 g white chocolate
- 1.5 cups heavy cream
Gin or Grapefruit Soda Sorbet:
- 3 cups gin or gray grapefruit soda
- 1 cup glucose syrup
- 1 gelatin sheet (1.7 g)
- 1 egg white
- 1 tablespoon sugar
Instructions
1. Namelaka: - Melt the white chocolate.
- Heat the milk until just below boiling, add the black sesame powder, and dissolve the softened gelatin in it.
- Gradually mix the milk into the melted chocolate in three parts, whisking vigorously with an immersion blender for about two minutes.
- Finally, add the cream and blend until smooth.
- Cover with plastic wrap and chill in the refrigerator for at least 4 hours.
2. Sorbet Mixture:
- Whip the egg white with sugar until stiff peaks form.
- In a bowl, mix the gin (or grapefruit soda) and glucose syrup.
- Soak the gelatin sheet in cold water for about 5 minutes, then warm a small amount of the gin-glucose mixture in the microwave and dissolve the gelatin in it.
- Combine the gelatin mixture with the soda mixture and gently fold in the whipped egg white.
- Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions. If you don't have an ice cream maker, pour the mixture into a freezer container and whisk every 30 minutes until fluffy and ready.
3. Serving:
- Whip the set namelaka until fluffy with an electric mixer and pipe into serving dishes.
- Serve the namelaka alongside the sorbet.
